“During fermentation it had strong notes of honeydew melon. Once finished we get floral and fruity aromas reminiscent of honeysuckle. On the palette we get a light minerality with a praline finish. Just wanted to let you know that we won a Silver medal at the International Beer awards this past weekend for our Sake Lager (specialty beer category). We used your 6006 Sake yeast. Turned out great. Tons of pear and melon. We used a little Nelson Sauvin but mostly it is the yeast character that comes thru. Ferments very slowly, but attenuated fine. Definitely my favorite of our Sake series so far.
