Performance Data
This strain produces a traditional farmhouse style beer that is dry with notes of hay and strawberries. It prefers high temperature fermentations, and is traditionally fermented at 85+ degrees. MIP-300 carries the STA1 gene, and has been classified as Saccharomyces cerevisiae var. diastaticus (super-attenuating yeast) using rapid PCR analysis. The personal favorite of our founder!
