“Seems true to 1801 strains I’ve worked with before. Kicks off strong notes of red apple and strawberries during fermentation. Once fermentation was complete and the sake was pasteurized and packaged we got notes of candied red apple and raspberries. Finished semi-sweet with an abv of 18.4%.
